Making microgreens

Microgreens are one of the best ways to get back into the garden during these days when the real garden is a foot-plus under snow and ice. These arugula (Eruca vesicaria ssp sativa) sprouts are only two weeks old and almost ready to sample. If you want to extend your harvest, wait until real leaves emerge and then the plant can be cut and eaten more than once. Yummm! 😋😋

Ironically, one of the best ways to grow them are in clamshell greens containers as with the lid they come with can become the perfect little greenhouse. If you have a window that gets a couple of hours of sun each day, you can’t go wrong.
